and more compact because 6 eggs per kilo are used (instead of
4 as per the legal requirements): the 2 extra eggs, the very thin
pasta and the low temperature drying lead to higher quality. As
for the noodles, it is advisable, after pouring them in hot water,
to wait for a few seconds before stirring.
